An Easy Saturday Date Night

A few weeks ago hubby and I did something fun that I know alot of us haven’t done since we were kids…


It was a very impromptu date night and it turned out to be great.

Yep, that is right, we laced up some skates and went out there with all the kids and had a blast!

We skated for over an hour and even played one of the rink games, didn’t win but had fun! I forgot how much of a workout it can be. We were so sore after and decided to treat ourselves to some well deserved frozen yogurt, I mean we did just burn a ton of calories, why not?!

So we headed to Orange Leaf.

Orange Leaf is a self serve frozen yogurt shop that has healthy and decadent ways to enjoy your yogurt. For Example, I got coconut, pistachio and oatmeal cookie (semi good for you) yogurt topped with fresh fruit, nuts and shredded coconut (It also had the coolest gummy frog but I ate him before taking the pic, oops.) While hubby got snicker-doodle and topped his with chocolate, cheesecake (thought it was cookie dough) and reeses. Orange leaf gives you the ability to pick your own style and they charge by the weight instead of cup, so you can get a lot or a little, ultimate freedom in dessert form.orangeleaf

It was a great date night and pretty cheap considering the cost of dinner and a movie, plus,  we got some fun exercise in without even thinking about it.

Ramen bowl and chop stick were made out of gum paste and then painted with food coloring gel, the seaweed is fruit roll up, the ham is sugar cookie with pink icing, the cabbage is sour straws cut up, the eggs are made from white chocolate and the naruto is cookie dough cut with cookie cutter into flower shaped with edible marker swirl. The cake is inside the bowl and covered with icing strands to look like ramen. Is one of my favorite cakes, hoping this year’s cake can compete. 🙂

So these are my themes for the last 3 years, I wonder what this year will be? I will let you know on the 17th 🙂

One Year Anniversary Tradition- Top Tier of Wedding Cake

Hi guys, as you know we just got back from our amazing Disney Anniversary trip and I mentioned that I ordered us a special cake at Disney since we wouldn’t be able to enjoy our top tier until after we got back.  So here is the post about saving and eating the top tier for our wedding cake for our one year anniversary.

The  tradition is to have the top layer of the cake made out of fruit cake (which apparently holds up forever). This layer is saved and frozen for the bride and groom to eat on their first anniversary for good luck.

So yep, we saved the cake top (wrapped in plastic wrap, then foil and boxed) and thawed it in the fridge. But I have to say I wish we had just eaten it when we got home from the honeymoon, when the cake still had a chance of being delicious and only had the I ordered cake at Disney for our anniversary.

Blah! Just imagine the Beverly face here, ok, it wasn’t that bad but I think no matter what you do cake just isn’t meant to keep that long.

The ice crystals invaded the cake leaving it hard and soggy at the same time, just not appetizing.

We can say we did it and we got our good luck but I think we would have been happier gorging on it post honeymoon then the gross nibble one year later.

All I can say is it is up to you whether you participate in the top tier tradition, some people do it out of superstition or tradition and some people can’t do it due to wedding location or cake cost and just order an anniversary cake for their first year.  It is your wedding and completely your call.

To us it was another funny experience we got to share with each other and another memory for us to enjoy. I am glad we did it.

Just remember if you are trying to decide to keep your cake for a year, it may not hold, so maybe just save a piece to share versus a whole tier or just  order a new cake maybe with the wedding theme as part of your anniversary festivities, since all we could manage was the one bite 🙂

Disney Anniversary Trip- Day 2- Magic Kingdom- Character meet n greet, Be Our Guest Restaurant and Celebrations

Good morning to all, so yesterday we left off after conquering Cruella Deville during our Sorcerer’s of the Magic Kingdom experience. Today we are going to finish our 2nd day of  the Magic Kingdom with a bang, we got to meet some awesome characters and see some truly amazing things. Starting off with these topiaries.

Then we went and checked out Mike Wazowski’s Laugh Floor, you can text in jokes and they chose some and read them, ours didn’t get picked but some were cute

The show is fun, there are three acts and the first one seems to vary from a male/male Siamese monster to a male/female one and their act was different both times we went. The second is Barry Boyle and he was funny both times, but the guy doing his part the second time around was absolutely hysterical, we still talk about it… ASHLEY!!! Lol!

The last act is Marty, Mike’s nephew and he reads the audience’s jokes. That is the end of the show, the canister is filled with laughter, so the monsters get power, we get entertained, and everyone wins.

Then we headed over to Buzz’s Space Rangers again where I found this hidden Mickey, we did pretty good this time too, but sadly still not Galactic Heroes. One Day!

After we beat up Emperor Zurg, we realized we should probably start heading back to Fantasyland for our Anniversary dinner at Be Our Guest and on our way there we found out that Gaston was in front of his tavern, so we ran over there to meet him.

Once we were done hanging out with Gaston, we checked in for our reservation at Be Our Guest and were told it would be a few minutes and the waiting area is on the bridge of the castle, so we walked around and took some pictures of the beautiful area.

So as I was wondering I got lost and stumbled into the west wing, alone! I know, like something straight out of Beauty and the Beast.  I was so excited to have discovered this that, I foolishly went in without hubby, wasn’t think, whoops! Later it became the joke, that hubby was beast and I was not to go to the west wing, lol!

The soup was good, had a nice amount of cheese, the mussels were pretty good, but hubby thought mine were better. 🙂

Truthfully both entrees were just ok, I liked Kris’ macaroni gratin but the pork was ok and the veggies were just eh, my dish was ok, the shrimp and scallops were cooked nicely but the puff pastry was boring and there was so much of it.

The strawberry cupcake was awesome, we really enjoyed it, both dishes were really pretty too, mine had a pink colored chocolate sliver and the little chocolate caviar balls. The puff had a piece of chocolate with be our guest written on it. The custard inside was nice.

We were on our anniversary for this trip and even made sure it was known on all our dinner reservations and I checked our slip at Be Our Guest and it said anniversary, but our server never even mentioned it. We saw tons of table around us with the grey stuff (which I saw and had to try) so when our server tried to rush us out with the check, we asked and she brought it over.

You know like in the movie, Lumiere says, “Try the Grey stuff, it delicious. Don’t believe us ask the dishes.”

Well we tried it and it was delicious, it is a cookie and cream panna cotta with the chocolate caviar. So glad Kris asked 🙂

The dining experience itself was probably one of our least favorite of the trip but that was mostly due to the service, I am guessing since the restaurant is new and highly sought after the wait staff hasn’t got the kinks out yet.  I know we will definitely give them another shot to impress, even if it is just to sit in the west wing and eat grey stuff for our meal 🙂

Once we were done eating I took hubby to the West Wing, so he could see it for himself, since I was silly and went alone.

From there we went through the  hall with the suits of armor and it was really cool, one was snoring and the other woke him up and they had a conversation while we were there, was a fun detail

The decor and detail were truly magical, I was really impressed, one of the prettiest restaurants on Disney property in my opinion.

So to sum it up, food was good but nothing truly outstanding (with exception of the cupcake and grey stuff) and the service could have been better but it was a really beautiful restaurant and you have to try it, if only to be wowed by the view and the details.

After dinner we rode some rides and did some pin trading (more on that after the trip report.) I remembered I got glow bracelets while we were waiting to ride space mountain, now the party can start, lol!

Disney’s Hollywood Studios – Edible Souvenirs, Just in time for our trip!!

Hi guys, two days till the trip and I discovered two new cupcakes just in time for our Anniversary Adventure!

First one St Patty Mickey Cupcake

March 8 – March 17: It is a chocolate cupcake, iced with green-tinted peppermint butter cream and topped with a white chocolate hat (also St. Paddy’s green). Mickey ears are the perfect finish, two round Vanilla wafers dipped in dark chocolate.

Easter Ears Cupcake

March 18 – March 31: It is the pineapple-coconut cupcake for Easter, yellow cake with white butter cream, coconut shavings and colorful confetti, with a pair of adorable, white chocolate bunny ears and pink polka-dot bow-tie perched on top.

They will be available at The holiday cupcakes are $4.99 at ABC Commissary, Pizza Planet, Backlot Express, Studio Catering Co., Starring Rolls, Rosie’s and Fairfax Fare. They are a “snack” on our Disney Dining Plan.

Just what I needed two more cupcakes to add to our crawl, lol!!

Up Themed Valentine’s day

Hi guys,  we are almost to the  final post of the Up themed Valentine’s day picnic.

I wanted to show you how the whole thing came together, I think it turned out super cute.

I got a paper mache mail box at hobby lobby for $4.99 (was going to buy the cartridge on cricut to make one for the same price, but I had less work with this one)

It was small so instead of doing the hand print, I painted them on and did our names as well.



Then I cut what seemed to be a million little hearts with my cricut and wrote various this I love about my hubby on them. And I hide the UP movie inside all the hearts.  Look at that stuffed mailbox!

In my last post I showed you how to make the “Ellie Badge” and this is how I presented the one I made to my husband.

I made some little love badges on paint and colored them and added them to a strip of construction paper, to look like Russel’s sash.

Then I made a letter on Photoshop explaining the gift, turned out really pretty.

boxup The Card: I made the envelope with card stock and littered it with my favorite foam adhesive hearts (probably used about 200 of them this Valentine’s day)

The card was all designed and cut on the cricut, I made the up house with various shaped and glued it all together. I used the same technique for these balloons as I did on the adventure book (glue the strings to each individual heart and then glue to card.) I drew the windows and door with black sharpie.upcard

The inside was also made with the cricut, except the bow, I used a small hole punch and some scissors. Glued the string in spots to get the loops. I was really happy with it 🙂 insideup

I had to get grape soda for the picnic, so I got this NuGrape from World Market and created my own grape soda labels on Photoshop.

It was too cold for a picnic outdoors, so I turned the living room into our picnic local. Hung some lanterns from the ceiling fan to mimic balloons.

Got a paper Mache house from hobby lobby for $6 and painted it to best look like the house, then I made fruit skewers to look like the balloons 🙂 IMG_5471

Since I am in between so many projects between Valentine’s day and our up coming Anniversary trip (yay!!!)  and have nothing to show yet, I decided to share a recipe before I have to store it away for the spring…

I have a HUGE (that word doesn’t even begin to cover it) love of pumpkin and I love to try new recipes. So with the holidays coming to a close and the new year beginning, the use of pumpkin will be dwindling as the time for chocolate covered strawberries, green drinks and cadbury creme eggs (yum!) fastly approaches, I wanted to share this delicious, simple cake recipe that makes use of that yummy pumpkin (you may still have a can lying around too) I made over the holidays. I had promised my dad I would send him the recipe, so I thought I would share it with everyone.

I know me, hubby and my MIL thought it was scrumptious!! Enjoy!

Pumpkin Better Than… Cake



  • 1 box yellow cake mix
  • 1 – 14 to 28 oz can pumpkin puree*
  • 1 tsp pumpkin pie spice
  • 1 – 14 oz. can sweetened condensed milk
  • 1 – 8 oz. tub cool whip
  • 1/2 bag Heath Bits
  • Caramel Sundae Sauce


  1. Mix together the cake mix, the pumpkin puree (DO NOT add the other ingredients on the cake mix box), and the pumpkin pie spice until a batter forms. Using the 14 oz. can of pumpkin puree will yield a thicker batter. Add more pumpkin if you’d like a thinner batter (which will yield a slightly fluffier cake).
  2. Pour batter into a well greased 9×13 baking dish. Bake at 350º according to the directions for a 9×13 cake on the cake mix box.
  3. Let cool for about 10 minutes after baking. Using the bottom of a wooden spoon, poke holes all over the top of the cake (go here for step by step of cake process: here) Pour the sweetened condensed milk over the cake, filling the holes. Refrigerate for 30 minutes.
  4. Spread the cool whip over top of cake. Sprinkle on the heath bits, and drizzle caramel over top (just to your liking). Refrigerate for 3-4 hours, or overnight (best).


DO NOT USE PUMPKIN PIE FILLING. YOU MUST USE PUMPKIN PUREE IF YOU WANT THE CAKE TO BAKE CORRECTLY. The cake mix + pumpkin puree version of pumpkin cake may not be for everyone. I like it just fine, especially when it’s soaked in SCM and caramel. But if you’re not sure about it, feel free to substitute your own pumpkin cake recipe as the cake base. DO NOT mix together the pumpkin, cake mix, and the other ingredients on the back of the cake mix box!!!! ONLY mix the cake mix and the pumpkin puree. You must let the sweetened condensed milk soak in all the way. Letting it sit overnight will yield best results. Use the bottom of a wooden mixing spoon to poke the holes in the cake– it’s just the right size.

*I use a 14 oz can. However, readers have reported success using any amount of canned pumpkin ranging from 14 oz to 28 oz. More pumpkin should yield a fluffier cake, but note that you may need to allow more time for baking. If you use more pumpkin, you may also want to consider using additional pumpkin pie spice or cinnamon.
